Easy healthy banana and strawberry baked oatmeal

Chewey, gooey oatmeal with a nutty bite. Sounds yummy right? Made with mashed bananas, strawberries, flaked almonds, oats and just a little maple syrup, milk and oil for binding and taste. And not so much as a pinch of sugar or a flavour unbalancing sweetener in sight!

I like to keep my recipes simple. How frustrating is it when you google healthy recipes and they are full of ingredients you would just never have in the cupboard? This is so simple to make in just one bowl with just a fork (to mash up the banana, stir the other healthy ingredients in and then push it into your choice of baking tins) so you don't have to stress about cleaning up a mess either!

                        

Recipe (Makes 4 bun or mini tart sized portions)
1 mashed banana
1 and 1/2 tbsp maple syrup
1 1/2 tbsp milk (your choice of milk)
1 tbsp healthy oil (I used olive oil and it didn't overpower the flavours)
1/2 cup rolled oats
1/4 cup jumbo rolled oats (I like the chunkiness)
1/4 flaked almonds
1/2 cup sliced or diced strawberries


Method
1.      Add ingredients in the order listed above, mixing together with your fork you mashed your banana with each time.
2.      Bake in greased bun, muffin or mini tartlet tins for 20mins at 175c.
3.      Let cool slightly (a few mins should do it) before removing from the tins. 


Serving suggestions
I do love greek yogurt. 

Or you could pour some milk over and have this as a lovely breakfast treat. 

If you bake them thin then you can pick then up to eat like a cookie as a healthy snack. 

Feel free to play around with the ingredients; I might try replacing my strawberries with apricots or blueberries next time!
